Banana Chocolate Chip Muffins (vegan)
4 ripe bananas
1/2 cup brown sugar or 1/2 cup pure maple syrup
1/2 cup coconut oil (soften in microwave)
1 teaspoon cinnamon
1 teaspoon cardamom powder
3/4 teaspoon salt
1 1/2 cups whole wheat flour
1 cup white flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 cup-1 cup vegan chocolate chips (depending on how many chips you desire)
Directions:

Preheat oven to 350°F

Grease or place cups in tin for 12 muffins.

Mash bananas in a bowl.

Add oil, sugar or maple syrup, salt, cinnamon and cardamon and mix.

Add flours, baking powder, baking soda, and chocolate chips...mix.

Spoon into muffin tins and bake for 20-25 minutes until muffins are done and slightly browned on top.
