Southwestern Quinoa Black Bean Lettuce Wrap
-4 cans of black beans (drained & rinsed)
-2 cups of cooked cold quinoa
-1 can corn (drained)
-1 can of Rotel (Mexican)
-1/2 onion
- 8 million cloves of garlic
- Splash of lime juice
- Bundle of fresh cilantro
- Salt
- Spread onto bed of Romaine lettuce or spread onto lettuce then roll into tortilla.
