Pumpkin Corn Chowder (Taste like Butternut Squash Soup)

Pumpkin Corn Chowder (Taste like Butternut Squash Soup)

Ingredients (use vegan versions):

1 small onion, minced
2 cups vegetable broth
1 (16 oz.) can pumpkin
1 (10 oz.) package frozen whole kernel corn, thawed
1 Tablespoon Turbinado (brown sugar)
1 1/2 tsp ground sea salt
2 cups soymilk
Sprinkle with pepper & cinnamon (optional)
Garnish with pumpkin seeds

Directions:

Sautee onion with water until tender. Add 2 cups vegetable broth, bring to a boil. Put onion & veg broth into blender with 16 oz can of pumpkin and puree. Pour back into pot. Add 2 cups soymilk, 10 oz corn, 1 1/2 tsp sea salt, and 1 T. turbinado (brown sugar). Continue to stir and simmer. Add ground pepper and sprinkle with cinnamon (optional).
